Sous Chef

An opportunity to work alongside a young and enthusiastic team with in the 5 star Rocpool Reserve and Chez Roux under the close guidance of Mr. Albert Roux OBE KFO and his Consultant Chefs. Candidates should have a wealth of experience behind them with ideally having served in a similar role for at least 2 years. You would be answering to the Head Chef at all times and responsible to maintain the high standards of food and presentation whilst the Head Chef is off duty. High standards are imperative in this busy, fast paced kitchen were an eye for detail and the passion to prepare quality, eye catching dishes comes naturally. High levels of cleanliness are expected and through delegation as well as a hands on approach to this important factor would be an important part of this position. Duty Manager

The role of Duty Manager is a hands-on, proactive and customer facing position that will need the highest levels of service, organisation and leadership for you to succeed. You will help in all departments to ensure the smooth running of the hotel and deal with any concerns that arise. The main focus of your management will be the food & beverage and front of house departments in order to cement the hotels outstanding reputation for quality produce and service.

A demanding and rewarding role as this requires a highly motivated and energetic manager from a successful junior management background within a similar property. Experience working with reservations systems and front of house operations are vital. A positive and proactive individual with a strong work ethic will thrive in this position.

Own transport is a necessity and travel and overnight stays at our sister property is part of this role.


We work hard to achieve our high standards and attention to detail. We would hope candidates would be working with us for up to one year, if not for a longer period of time.

ICMI Group Assistant Operations Manager

Due to the expansion of ICMI, we are currently employing a Group Assistant Operations Manager:

Brief Outline:

Group assistant operations managers have to be able to solve problems quickly and in a professional and pleasant manner. They must be able to deal successfully with a wide variety of people from different cultures and backgrounds. Have initiative, self-discipline, effective communications skills, and the ability to organize and direct the work of others.

Assistant operations managers are responsible for making decisions with the guidance of the Group Operations Manager that directly affect the day-to-day operations for the entire group. Travel and working away from home is a key factor within this job role.

Minimum experience required:

2 years assistant general manager in 4-5 star hotel with excellent food and beverage background.

Full drivers licence required.
